From the Vineyard to the Winery
At Gothic Winery, we carry out a mechanized night harvest to ensure that our grapes reach the optimal temperature of 12-13ºC. This process is crucial because, during the night, the enzymatic activity of the grapes is minimal, preventing oxidation and preserving their organoleptic potential to the fullest.
The temperature of the grapes upon arrival at the hopper is maintained between 8ºC and 14ºC. From the moment the grapes are placed in the stainless steel tub to when they are transferred to the winery hopper, it takes between 50 and 75 minutes, ensuring the fruit arrives in the best possible condition.
The winemaking process is carried out through cryomaceration, a cold process that promotes the extraction of aromas from the must. Additionally, alcoholic fermentation occurs at low temperatures (between 9.5ºC and 10ºC) over an extended period, allowing for a more complete and smoother fermentation.
Our winery is equipped with state-of-the-art technology from France and has a capacity of 240,000 frigorías, allowing us to maintain controlled temperatures throughout the entire process. Tangential filtration, performed only once, helps maintain the quality and purity of our wines.

Denomination of Origin
The Rueda Designation of Origin was officially recognized on January 12, 1980, by the Ministry of Agriculture, becoming the first D.O. in the Autonomous Community of Castilla y León. This recognition was achieved after years of focused work on the protection and promotion of the native Verdejo grape.
Located in an exceptional natural setting, the Rueda D.O. offers ideal conditions for producing high-quality white wines, with growing international recognition. Since August 5, 2008, red and rosé wines have also been covered by this designation, according to the regulation published in the Official Bulletin of Castilla y León.
The production area covers a total of 74 municipalities: 53 in the south of Valladolid, 17 in the west of Segovia, and 4 in the north of Ávila. While the grape varieties are grown throughout the region, the municipalities of La Seca, Rueda, and Serrada host the highest concentration of vineyards, particularly the Verdejo variety, which occupies the largest portion of the cultivated land.
